Awesome Meatloaf 2 PRINT/SAVE
2 lb. ground beef
1 lb. Italian sausage
1 10 ounce container seasoned bread crumbs
1 small can portabella mushrooms
1/2 small onion finely minced
1/3 cup favorite BBQ sauce (I use KC Masterpiece)
3/4 cup water
1/3 cup ketchup
Pre-heat oven to 350ºF.
Mix wet ingredients together first, then add onion, mushrooms, mix both meats together separately.
Combine crumbs with wet mix. Then combine new mixture with meat mix. This seems to distribute the ingredients more evenly throughout the loaf. If mixture is to dry, add small amounts of water until moist (not to moist).
Shape into a loaf, making it flat and uniform thickness for even baking. Place on a two piece broiler pan so that drippings drop down into bottom of pan,
Bake uncovered 1 hour and 15 minutes or until done.
Let stand ten minutes before serving. Makes about 8 servings.
This recipe eliminates the dry soup mix. The dry mix has been known to cause some problems digesting in the firehouse.
There is a nice sweetness with the addition of the BBQ sauce.
